So I'm almost finished the top for my older son's wedding next Monday, but an attack of the tummy-icks has held me back a bit. Even so, it's gone stupidly freezing here in Melbourne (8.3C, feeling like 2C, and with snow up in the ranges). So I remembered on the River Cottage series, and made up this one:

Sausage slow cooked dinner.

500g sausages (I used Pork Cumberlands, twisted into half-sized snags)
A large celeriac
4 carrots
3 sticks celery
Any other root vegies you choose to add.
An onion if you can ([ profile] lederhosen doesn't do onions)
1 strip bacon. (I am lucky enough to have some of [ profile] chaos_crafter's home smoked :-) )
1 tin tomatoes
1 cup stock
Bouquet garni or your preferred herbs. I used dried parsley.

Chop your bacon into fine pieces. Toss it in the slow cooker on "brown" to start sizzling.
Once it's sizzled and cooked, add in the sausages and stir
While they're cooking, peel and dice your vegies. Six sided dice, you nerds!
After 5 minutes add the vegies, and stir as they brown. Cook for another 5 minutes.
Add the stock, the tomatoes and the herbs. Put the lid on and slow cook for at least an hour, although it won't complain if you leave it in another hour or so.

You can do this in a large heavy-based casserole pot as well. Your bacon should provide enough fat to get things started, and the sausages will have more fat and salt and spices.

Served with mashed potatoes. I should have done some greens, but feeling too tired. Early night methinks!
