Chicken Croquettes for dinner

I've been meaning to make these for ages, and tonight I got around to it:
500g minced chicken
1 clove finely minced garlic (or equivalent)
1 rasher of bacon chopped fine
1 spring onion diced fine - optional
1/2 cup flour
1 egg
3 slices of cheese (stacked up and cut into 12 rectangular prisms), or enough cheese-of-your-choice to make 12 1cm cubes (I recommend a hard cheese)
1 cup breadcrumbs
Mix chicken, garlic, bacon bits, onion and egg. Add enough flour to make the mix a bit stiff so that balls of it hold their shape.
Divide mixture into 12. Take up one part, make into a ball, then push the cheese cube into the middle so it's totally surrounded by chicken mix. Then roll the ball in breadcrumbs and put on a plate and make the next one.
Fry in a frypan in hot olive oil, turning regularly until all the outside is browned nicely, then put on a baking dish in the oven at 180C (350F) for about 10 minutes. Serve on pasta or with mashed spud and vegies. Warn people that the cheese inside will be hot.
This lot would probably serve 3-4 people. It was really too much for two.

NYOMS. I should try 'em. I've been making mini meatballs lately, not bothering to fry them, just bake them. They are nyoms.
