To make sultana cake, add 185g washed sultanas with the milk

For
- 125g butter
- 3/4 cup castor sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 cups self-raising flour
- 1/2 cup milk
- Preheat oven to 175C ("moderate")
- Grease-and-flour or line a baking tin. (20cm round, or loaf)
- Cream butter, sugar and vanilla together until light and fluffy
- Add eggs one at a time, beat well
- Fold in remaining ingredients as flour-milk-flour-milk-flour
- Spoon into tin
- Bake for 50-60 mins. Test with a skewer or knife blade
- Let sit in the tin for 5 minutes, then turn out onto cake rack to cool.
